This is a super easy and healthy side dish for any spring time or summer time meal. It would also be good served over pasta.3 small zucchinis
1 medium sweet onion
1 large clove garlic, crushed in a press
handful of fresh basil leaves, cut into thin strips
1 can fire roasted tomatoes
Slice zucchni and onions. Put everything in a pot. Simmer for about 20 minutes, stirring occasionally, until the squash and onions are tender. That's it! Enjoy.
